Pasta dishes are always a good idea!
1. remove the peel from the onion and chop finely. Rinse, clean and dice the zucchini. Rinse the parsley and basil, shake dry and chop finely without the stems. Blanch (scald) the tomatoes, skin, seed and roughly dice them.
Heat the oil in a saucepan and fry the onion. Add the zucchini cubes and fry for about 5 minutes. Add the tomatoes and herbs, season with salt and pepper and simmer for about 20 minutes at medium-low heat with the lid on.
Pour the clear soup and let it boil for a short time. Cook the pasta in the soup until al dente. Serve sprinkled with the Parmesan cheese.
