Potato Cake with Beef Tartar and Chive Sour Cream

Instructions:

Peel the potatoes and cut or slice into very thin slices. Thickly butter a baking dish. Finely dice the onion and sprinkle the dish with it. Spread the potato slices evenly on top. Stir eggs and whipped cream well and add salt, pepper and nutmeg. Pour the mixture over the potato slices and sprinkle with the grated cheese.

Place in the oven at 180 degrees Celsius and bake until the potatoes are soft. If at this point the cheese does not have a nice color, make this with stronger top heat.

Mix the tartar with the finely chopped shallots, gherkins and capers. Season with salt and pepper and fold in the yolks. Shape into 6 equal-sized balls.

For the chive sour cream, mix the sour cream or crème fraiche with yogurt and the finely chopped chives and season with salt and pepper.

Our tip: Always use fresh chives if possible!
