For the apricot jam with shot, cut the apricots into small pieces. Mix the apricots thoroughly with the preserving sugar.

Leave the mixture to infuse overnight. Select the size of the pot so that it is only half filled with the jam mixture. Now heat the mixture and puree it with a hand blender to the desired consistency (chunky or mush) and bring to a boil.

When the jam boils, look at the clock and boil for 4 minutes until bubbly. Stir constantly to prevent anything from sticking.

Pour hot jam into hot rinsed twist off jars to the top, twist shut and place on lids. Allow to cool.
