For the dandelion salad Karst style, first carefully wash the dandelion and spin dry. Wash and boil the potatoes. Hard boil the eggs. Peel and slice the cooked potatoes and eggs.
Cut the pancetta (or prosciutto) into small slices and fry in a pan until crispy.
Add the still hot potatoes, pancetta and arugula to the dandelion and mix. Season the dandelion salad with oil, vinegar and salt and serve.
