Peel apples, remove core, cut into wedges, bring to a boil with wine, sugar, lemon zest and vanilla pulp. Cover and simmer at low temperature for 5 minutes, remove from heat. Rinse dates, remove skin, halve, remove seeds, cut lengthwise into wedges. Remove lemon peel from compote. Fold the dates into the compote and allow to cool. Whip cream with vanilla sugar until stiff. Layer compote and whipped cream alternately in a bowl.
