For the Parmesan chips, finely grate both cheeses fresh. Mix together and form into balls about the size of a plum. Place on a baking tray lined with baking paper and bake in a preheated oven at 200 °C for 8-10 minutes.
Remove and use as desired in this shape (the cheese melts in about the shape of a leaf) or place in a small bowl and shape into a half-round bob.
Let cool.
