For the chicken cutlets, peel and halve the potatoes. Beat the chicken fillet and season one side. Put the potatoes in a baking dish, place the chicken cutlets with the seasoned side on top of the potatoes and spread the bruschetta on top.
Preheat the oven to 200 °C, bake the chicken cutlets for 25 minutes, then sprinkle with Parmesan cheese and place in the oven for another 10 minutes.
