For the spaghetti with arugula, first boil the pasta water and then cook the spaghetti al dente in it. Peel the garlic clove, crush lightly with a knife and add to the pasta water.
In the meantime, wash the arugula, remove the stems and cut into bite-sized pieces. Dice the feta. Cut tomato and blanch briefly in boiling water (can also be done in pasta water). Then skin and dice.
Place tomatoes, arugula, feta, herbs in a large bowl and season with salt and pepper. Add olive oil and balsamic vinegar. When the pasta is ready, drain and immediately add to the other ingredients in the bowl. Add a little more cooking water if necessary. Mix everything well and serve the spaghetti with arugula immediately.
