A great pasta dish for any occasion:
1. peel and finely dice shallots. Sauté in hot fat until translucent. Add almond kernels, sweat briefly. Add milk and whipping cream, season. Simmer gently over low heat for approx. 3 min.
In the meantime make pasta. Rinse chives, dry, cut into rolls. Remove rind from cheese.
3. stir cheese in flakes into almond whipped cream and let melt. Season sauce with nutmeg, salt and freshly ground pepper to taste, fold in chives. Serve with the pasta.
