Soak bread rolls in milk and squeeze well. Cut meat into coarse pieces and mince through the middle disc of the meat grinder. Also turn the buns through the mincer. Mix both and season with garlic, salt, pepper and lemon zest. Work well. Form loafs from the mixture and let them rest in the refrigerator for about 1 hour. Heat oil or clarified butter in a frying pan and slowly fry the loaves on both sides.
