For the hash browns, cook the pasta according to the package instructions. Cut the ham, meat loaf and pancetta into coarse pieces and pass through a meat grinder. Also put the quartered onion and garlic through a meat grinder and mix with the rest of the mixture.

In a large frying pan, heat the clarified butter and sauté the hash mixture for about 5 minutes over medium heat. Season to taste with salt and pepper.

Add the pasta and the chopped parsley (or chives), mix well and serve the hash browns right away.
