For the Grünkernlaiberl, bring the water to a boil and prepare a vegetable soup. Peel and chop the onion.

Heat butter in a pot and sweat onion in it. Add green spelt meal, stir and deglaze with vegetable stock.

Bring to a boil and continue to simmer for 5 minutes, then place the hot pot in ice cold water to cool.

Peel garlic and squeeze in. Chop chives and parsley, grate Gouda cheese and mix everything together with egg and breadcrumbs.

Season with salt and pepper. Shape into small loaves. Heat butter in a frying pan and fry the green spelt loaves on all sides until brown.
