For the whole spelt egg dumplings, bring enough salted water to the boil in a pot! Meanwhile, for the whole spelt egg dumplings, put the flour, a pinch of salt, the beaten eggs and the melted butter in a bowl and stir with the milk until smooth.

Mix everything quickly to form a dough. The mixture should not be too firm! If necessary, just add a little more milk. With a small spoon, cut out dumplings from the dough and immediately drop them into the boiling water.

As soon as the dumplings float to the surface, strain, rinse with cold water and then drain. Now mix the gnocchi with a few drops of oil to prevent them from sticking together!

Heat the butter in a pan, fry the finely chopped shallots briefly in it and add the gnocchi. Until the dumplings are warmed up, toss regularly!

Then mix the eggs with a pinch each of salt, pepper and nutmeg. Now pour the egg and spice mixture over the dumplings and let them brown for about 2-3 minutes over high heat.

Now arrange the whole spelt egg gnocchi and sprinkle neatly with chopped chives!
