For the zucchini cake with maple syrup, preheat the oven to 180°C degrees and line or grease a tray with baking paper. Pour the maple syrup over the grated zucchini and let it sit for about 30 minutes. Beat the eggs with sugar, vanilla sugar, oil and cinnamon. Then add the zucchini and stir it in. Mix flour with baking powder and fold into the batter alternately with the nuts. Spread the dough on the baking sheet and bake for about 35 minutes at 180°C degrees. Let the cake cool and melt the cooking chocolate with the butter in a water bath. If the glaze is a bit too thick, just add some water and mix well. Spread the glaze on the cooled zucchini cake with maple syrup.
