Beat the egg whites until stiff. Stir in yolks and flour, season with salt and herbs. If desired, add diced ham or vegetables. Bake in a buttered and floured pan (or dish) in the oven preheated to 200 °C for about 15 minutes until golden. Let cool and then cut into cubes or squares.
