For The Napkin Dumplings:












Instructions:

Peel carrots, turnip and celery. Boil water, add ham and all other ingredients, soften gently for about 90 min. Once root vegetables are cooked, remove and cut half into ½ cm cubes. For the napkin dumplings, separate eggs. Beat egg yolks with butter until creamy, mix with diced toast. Add kitchen herbs and diced seasoned vegetables season with salt and pepper. Add the milk until the mixture is not too wet.

Whip the egg whites and fold into the dumpling mixture. Butter aluminum foil, form dumpling mass into rolls and roll up. Cook dumplings in water for 12 minutes.

Cut ham into slices, cut root vegetables decoratively and arrange on plates with napkin dumplings.
