Instructions:

Let the soup boil. Pour in the chicken breasts and simmer with the lid closed for twelve to fifteen minutes, depending on the size, before reaching the boiling point. Take out and cool a little.

Stir salt, mustard, vinegar and pepper. Add the oil and stir to make a creamy sauce. Stir in mayo and Nordic sour milk. Season if necessary.

Cut the melon in half, remove the seeds and dice. Cut the chives or spring onion greens into rolls.

Spread out a baking dish or platter with the lettuce leaves. Cut the chicken breasts into bite-sized pieces. Arrange on the lettuce leaves with the diced melon. Drizzle the sauce on top and sprinkle everything together with spring onion greens or chives.

(*) Nordic sour milk: This sour milk, acidified with special bacteria, is often enriched with cream and has a fat content of 6-12 percent. Sour milk is often better known to consumers under various brand names such as M-Dessert (Migros), Dessert (Coop), Viking or Fjord. Sour milk can be substituted with whole milk yogurt natural, to which 2 tablespoons of crème fraîche is added to each jar or cup. Sour half cream is also a good alternative.
