For the salmon fillet in coconut sauce, drizzle the salmon fillet with olive oil, wrap in aluminum foil and bake in the oven at 200 degrees hot air for 25 minutes. Peel the zucchini and carrots and cut them into rings. Cut the spring onion into rings as well.
Cut the tomatoes in half. Put the vegetables in a baking dish. Add olive oil, season with salt and pepper, mix well and bake in the oven at 200 degrees hot air for 30 minutes.
For the sauce, boil the coconut cream with the coconut milk, add the dill and stir in the lemon juice as well. Simmer for about 5 minutes and serve the salmon fillet in coconut sauce with oven vegetables.
