Separate the eggs for the Sacherschnitten in a loaf pan. Cream the room-warm butter with the powdered sugar and gradually add the yolks. Mix in the melted cooking chocolate.
Mix the flour with the baking powder and baking soda and sift it in. Mix everything well.
Beat the egg whites and gently fold into the batter.
Empty the mixture into the greased loaf pan and bake in a preheated oven at 180° for about 30 minutes. Allow to cool.
For the chocolate glaze, melt the butter slowly and let the cooking chocolate melt in it (all at low temperature because otherwise the chocolate will be dull!).
Spread a thin layer of apricot jam on the cake and pour the chocolate glaze evenly over the Sacherschnitten in a loaf pan.
