Instructions:

For the Rösti Muffins, place 12 of the 18 slices of Black Forest Ham in previously greased muffin tins. Peel and coarsely grate the potatoes. Cut the spring onion into rings.

Finely chop the rosemary sprigs and chop the remaining 6 slices of ham as well. Mix the chopped ingredients with the 2 eggs and the 3 tablespoons of flour and season with salt and pepper.

Fill the potato dough into the cavities and fold the ham ends over. Bake the muffins for about 30 – 40 minutes at 180 degrees.

Let the muffins rest for another 5 minutes and serve warm.
