Instructions:

Preheat the oven to 80° Celsius and heat a plate.

Season the saddle of pork with salt and pepper, brown it in the hot butter around it for four to five minutes, place it on the preheated plate and let it cook in the heated oven at 80° C for 2 1/2 hours.

(In the original recipe, a parsley mousseline is added as a sauce).
