For the lung roast in pumpkin seed coat, season the lung roast with salt and pepper. Finely chop the parsley.

Also finely chop the pumpkin seeds, chop the feta and mix. Spread the mixture around the lung roast, wrap with bacon and sear. Pour whipped cream and add parsley.

Place the lung roast in the pumpkin seed coat in a baking dish. Add the juice, extend with water if necessary and finish roasting in the oven for about 20 minutes.
