A great pasta dish for any occasion:

Toss the pasta in enough boiling salted water, once the water boils repeatedly, pour in a mug of cold water. Repeat this three to four times until the noodles are cooked, but not too soft. Drain and drain.

Bring the clear soup to a boil. Cook the chicken in it for 5 minutes. Cut the spring onions into 1 cm wide rings, add, season with soy sauce.

Arrange the noodles in soup bowls. Lift the meat out of the clear soup with a skimmer and spread evenly on top. Top up with clear soup and sprinkle with chili seasoning.
