For the rice casserole, peel and core the apples and cut into small cubes. Put them in a pot and add cinnamon and sugar and lemon zest / juice to taste.

Beat egg whites with granulated sugar until firm. Add the butter and the raisins to the cold rice and fold in the snow.
Pour half of the mixture into a buttered and rolled out form, spread the cold apple pudding over it, and finally spread the second half of the rice mixture over it.
Bake in the preheated oven at 180 degrees for about 2 hours.
