For the pork tenderloin in dark beer sauce, cut pork tenderloin into thumb-thick medallions.

Season with salt and pepper. Heat oil and butter in a pan and fry medallions in it for about 4 minutes on both sides. Remove from the pan and keep warm wrapped in aluminum foil (preferably in the oven preheated to approx. 80 °C).

Stir granulated sugar into the roast residue and allow to caramelize slightly. Add flour, stir through and deglaze with beer. Let it boil down and then season with salt as well as pepper. Finally, stir in the cold butter and caraway seeds and thicken the sauce with them, but do not let it boil anymore.

Arrange the pork medallions on the warmed plates and pour the sauce over them.
