Put the water, yeast and sugar in a mixing bowl and let stand for 10 minutes.
Now add the remaining ingredients and knead into a smooth dough.
Place a cloth over the mixing bowl and let rise in a warm place for about 1 hour.
Form the dough into equal-sized portions and let rest again, covered, for 30-40minutes.
Chop the onions, peppers, parsley and garlic in a food processor. Add the minced meat, tomatoes and bell pepper paste and chop again.
Season with salt, pepper, sugar, cumin, oregano and paprika to taste.
Refrigerate this mixture for 1-2 hours.
Prepare the grill for baking – to do this, preheat the pizza stone indirectly to about 230 degrees.
Roll out the pizza dough very thinly, spread the minced vegetable mixture evenly on it and immediately place it on the pizza stone and bake for about 3-4 minutes. The edge should be nicely crispy brown baked.
Now you can fill the pita pure or with a salad, feta cheese, yogurt dip and enjoy rolled up.
