For pregnant women and nursing mothers: Sweet snack

Especially during pregnancy, the craving for sweets is often very large. With this light dish you get a lot of calcium and egg white, fat-soluble vitamins A, E and D, as well as vitamin C. The dish is not low in calories: it replaces a small meal.

Rinse rhubarb, cut into 1 cm wide pieces, boil with 2-3 tbsp. water at low temperature for about 10 minutes until soft, cool. In the meantime, heat the milk, add the cornmeal and bring to the boil. Bring to the boil, stirring continuously for a short time, then remove from the heat and leave to soak for about 15 minutes. Stir in a spoonful of honey and the almond kernels. Separate the egg and fold the yolk into the flummery. Beat the egg whites until very stiff and add a spoonful of honey while continuing to beat. Fold the rhubarb compote into this snow, perhaps season with a tiny bit of sweetener and pour over the flummery.
