For Pho with fish and soba noodles, coarsely grate the carrots, defrost the spinach, cut the ginger into thin strips, the garlic cloves into thin slices and the fish fillets into cubes.

Cook soba noodles according to package directions and place in soup bowls. Cook carrots, spinach, ginger, tomato paste and garlic in vegetable soup for 10 minutes.

Add fish cubes and cook for about 3 minutes. Season soup to taste with salt, lemon juice and maple syrup, if desired, and pour over noodles in soup bowls. Serve Pho with fish and soba noodles and enjoy.
