Defrost spinach leaves if necessary. Peel onion, chop finely and sauté in cooking oil until translucent. Add spinach and mix with cream cheese. Season with salt and pepper. Beat eggs with milk and salt. One by one, shape and fry 4 omlettes in the heated but not browned fat.

Cover with spinach, fold and serve immediately. Wholemeal bread goes well with it.

Our tip: It is best to use fresh herbs for a particularly good aroma!
