For the no-bake chocolate mousse cake, first prepare the base. To do this, place the chocolate cookies in a freezer bag, seal and roll over them with a rolling pin until the cookies have crumbled to crumbs. Pour the melted butter over them in a bowl. Cool briefly and spread the mixture evenly over the bottom of a cake pan. Press down firmly.

For the cream, beat the egg whites until stiff. Chop the milk chocolate into small pieces and melt over a bain-marie with a dash of milk. Soak the gelatine in cold water (note: no longer than 10 minutes) and then add to the chocolate-milk mixture and allow to dissolve. Be careful not to heat the gelatine too long, so that it does not lose its binding effect. Remove the melted chocolate from the heat.

Whip the cream until stiff. Just before it is stiff, sweeten with vanilla sugar. Very carefully fold the whipped cream into the gelled chocolate mixture, alternating with the beaten egg whites, until you have a creamy chocolate mousse.

Spread the cream on the cake base and chill in the cake pan in the refrigerator for a few hours.

Before serving, very carefully remove the cake ring and quickly serve the chocolate mousse cake without baking.
