For the fennel-orange soup, chop the young onion and sauté in a little vegetable oil. Add the fennel bulbs cut into small pieces.

Squeeze the juice of one orange, grate the zest of one orange and add it as well. 2. fillet the orange and add it to the pot as well.

Fill with water to about 1 inch above the vegetables and bring to a boil. Add vegetable stock cubes, simmer for about 15 minutes.
