Instructions:

For the Moorish meat skewers, cut the meat into cubes.

For the marinade, peel the garlic and finely mortar it with the remaining ingredients and spices.

Marinate the meat with this sauce for a few hours. Put the meat cubes on a wooden skewer and sear.

Finish cooking at 80° in the oven (at low cooking temperature!).
