Instructions:

Place the dough in a quiche dish and prick with a fork. Fry the bacon and the shallot until golden brown. The well washed spinach fall together in a frying pan and season with salt and nutmeg, drain in a sieve and put on the dough form. Spread bacon, shallots and cheese evenly on top.

Mix whipped cream, crème fraîche, eggs and egg yolks and season.

Pour this mixture over the spinach and bake the quiche for 45 minutes at 175 °C.
