Peel the carrot and grate finely. Peel the onion and dice it very finely.

Mix the minced meat in a bowl with the egg yolk, the herb salt, the onion cubes, the grated carrots and the herbs. Leave to stand for some time.

In the meantime, clean the spring onions and cut them into rings. Peel the carrots and cut them diagonally into narrow slices.

Clean the zucchino and slice finely. Sauté the vegetables in melted butter. Add the water and season with soup seasoning. Sauté the vegetables for 10 to 15 minutes.
