Cut the melons into eighths, remove the seeds and cut the flesh from the skin. Cut the eighths into pieces of about 2 cm. Squeeze the juice of one lemon and marinate the melons with the juice.
Mix the oil well with salt, apple cider vinegar, pepper, honey and coriander seeds. Pluck the cilantro greens from the stems and chop coarsely.
Drain the melon pieces well in a colander. Then carefully mix with the dressing and chopped cilantro greens, sprinkle with the toasted sesame seeds and arrange on a platter.
