Prepare Linzer eyes step by step: Quickly knead flour, butter, powdered sugar, vanilla sugar, salt and egg yolks into a shortcrust pastry. Let the finished dough rest for two hours.
Preheat the oven to 170 ºC hot air.
Roll out the dough on a floured work surface and cut out round cookies. Poke three small holes in half of the discs.
Place the cookie slices on a baking sheet lined with parchment paper and bake for about 12 minutes.
Mix the currant jam with the rum. Spread the full cookie slices with currant jam.
Sprinkle the perforated slices with powdered sugar and stick them on the full cookie slices.
