For the lavender tiramisu, prepare the coffee and let it get cold.

Beat the eggs and separate them. Beat the egg yolks with the sugar until foamy.

Strip the flowers from the lavender sprigs and mix with the mascarpone.

Whip the whipped cream until stiff.

Mix the egg-sugar mixture and the mascarpone and gently fold in the whipped cream.

Mix the coffee with the liqueur and gradually dip the biscuits in it, layering them on the bottom of a container. Spread a layer of cream on top. Then add another layer of soaked biscotti, followed by another layer of cream.

Then refrigerate for a few hours.

Before serving, sprinkle the lavender tiramisiu with cocoa powder and decorate with lavender flowers.
