For laughing Spitzbuben, prepare a shortcrust pastry from the ingredients.
Roll out the dough to the thickness of the back of a knife and cut out laughing faces from half of the dough.
Cut out slices from the other half of the dough. Bake at 180 degrees. Allow to cool and sprinkle the smiling faces with sugar.
Spread apricot jam or strawberry jam on the other cookies and assemble as laughing Spitzbuben.
