Drain the sheep’s gupferl cheese on a board.

Cut the watermelon into cubes. Peel the pink grapefruit and remove the skin – it is best to collect the juice.

Place gupferl cheese on the center of the plate. Arrange the watermelon pieces and the pink grapefruit around the gupferl cheese.

Marinate with the collected juice of the Pink Grapefruit. Season with pepper and drizzle with the balsamic cream.

Garnish with the rosemary sprig and serve.
