Grease 4 shallow ovenproof dishes. Preheat the oven to 180 °C.

Wash and core the apples and cut them into thin slices. Arrange the apple slices in a fan shape in the bowls and sprinkle with lemon juice.

Mix sugar, vegan butter, cinnamon and almonds until a crumbly mixture forms. Spread almond crumble evenly over apples and bake in oven for about 15 minutes.

Form dumplings from the vanilla ice cream, arrange on the crumble and serve with some lemon balm.
