Rinse the fish under cold water, dry and sprinkle with juice of one lemon. Cover and let it stand for 5 minutes.
Peel shallot and garlic clove, remove seeds from pepper and finely chop everything together. Sauté shallot and garlic in hot oil. Add pepper and bay spice. Sprinkle sugar and let it melt. Extinguish with vinegar. Add cherries and simmer for 10 minutes. Season with salt and pepper.
Dry the fish and season with salt and pepper. Grill on both sides in a hot grill for 4-6 min. or roast in a frying pan with a little fat.
Serve with the cherry sauce.
