Crumble sheep’s cheese and mix with yogurt and crème fraîche. Peel the garlic and press it into the mixture. Season with salt, pepper and sugar. Blanch tomatoes with boiling water, peel, remove seeds and cut into cubes. Cut basil into strips and fold in with tomatoes.
