Chop the shallots and sauté in the butter. Peel the potatoes and cut them into thin slices. Grease a baking dish with butter. Put in layers of shallots, potato slices and cheese. Mix wine and water, add salt and pepper and spread evenly over potatoes. Bake for 1 1/2 hours in the oven at 180 °C with the aluminum foil and the lid closed. Remove the foil as soon as the potatoes are soft. Then spread the cream evenly over them. Bake again for 15 minutes at 220 °C.
