Bring water with sugar and salt to a boil in a saucepan. Add cinnamon and cloves. Rinse and peel apples and pears. Cut out core and cut into cubes. Add to the saucepan. Simmer at medium temperature with the lid closed for ten minutes. In the meantime, peel the oranges, cut them into wedges, then into pieces. Remove the saucepan from the stove. Take out cloves and cinnamon stick. Cool the compote and put it in the refrigerator for a short time. Just before serving, add the oranges with the raisins. Arrange compote in stemmed glasses. Drizzle each glass with a tablespoon of white rum. Serve sprinkled with almond kernels.
