Knead the ingredients of the pasta dough to a compact dough (best in a food processor), roll out with a rolling pin very thin (or pasta machine) and brush the pasta sheets with egg. For the filling, mix all the ingredients, put 1 tablespoon on the pasta dough, fold the second sheet of dough over it and cut out in any shape. Simmer the pasta in boiling salted water for 3 minutes and toss in butter with finely chopped mint and serve immediately.
