(*) The hypocras, crown of Basel table culture, can be documented (north of the Alps) since the early Middle Ages. It is still part of the New Year’s ceremonial. The name for the sweetened and spiced wine comes from the “Manica Hippocratis”, a textile filter, common instrument of doctors and pharmacists in the preparation of liquid medicines, not least hypocras, which itself was considered a remedy.

The sugar in a strong pint (***) of the wine foamed, and still a little boil on the stove.

Nb the spice is put on the spot in a bundle (****) for it, the cinnamon only broken small. Later, pour the hot wine into the rest, put the bundle in the same way, and let it stand for a few days – if after 2 days the wine becomes too acrid, take out the bundle, if not, leave it in until the wine is drained.

(***)half the amount of wine (****) tied in a tulle bag, with a rest of the “hypocras bag” Note: Instructions for hypocras preparation can be found in many cookbooks, partly with additions of nutmeg spice as well as Marsala.

Cloves and cinnamon are always added.

Tip: Stock up on a variety of high-quality spices – it pays off!
