For the elder plum roasters, caramelize the sugar in a saucepan. Deglaze with red wine, apple juice as well as vinegar and boil down for 5 minutes.
Once the caramel has dissolved, add orange juice and zest, plum wedges, elderberries, grated apple and spices and simmer for 10-15 minutes.
If the roaster is still too thin, mix some cornstarch with water and thicken with it. Put in a cold place.
