Instructions:

For the caramel topping for cupcakes, first mix 1/4 of the whipped cream with starch and egg yolk for the pudding. Bring the remaining whipped cream to a boil with sugar and vanilla pulp. Stir in the whipped cream and egg mixture and bring to a boil while stirring constantly, immediately remove from heat, transfer and let cool.

In the meantime, prepare the caramel sauce. To do this, bring water and sugar to a boil. When the sugar has completely dissolved and the caramel is light brown, whisk in the whipping cream and butter for about 3-5 minutes. Then remove from heat and let cool.

When both have cooled, blend caramel sauce and pudding. Stir in mascarpone until everything is combined into a creamy mixture. Use a piping bag to pipe the caramel topping for cupcakes onto the chosen cupcake base.
