For the Easter bunny cookies, crumble flour with butter, knead with powdered sugar, vanilla sugar, salt and the yolks. Wrap dough in plastic wrap and let rest in a cool place for approx. 1 hour. Preheat oven to 180 °C.
Roll out dough on a floured work surface to a thickness of approx. 3 mm. Cut out cookies with a cookie cutter. Place cookies on a baking tray lined with baking paper and bake for approx. 11 minutes.
Spread with jam and put 2 together at a time.
