The peas soaked for one night in the soaking water with bacon, onion and a little uncut greens briefly boil and cook gently at low temperature. Attention! Burns easily, then it is called “pea soup like at home” Add water as needed.
In the last 15 minutes add potato cubes. Before serving, take out the bacon, stir about 3/4 of the soup through a sieve, chop the bacon, add it back to the soup. Season with a little pepper, marjoram and savory.
If you really want the soup to taste like Aschinger’s, you can stretch it almost as much as you like with flour.
For home cooking: add golden brown fried onion rings on top.
The soup can also be made with bacon rinds and fresh pork rinds, and later finely chopped, browned bacon cubes can be formed on top.
